In this course, we will, first and foremost, drink a lot of coffee! Our goal is to help you develop preferences for coffee. To do that, we have to drink coffee! We’ll consider questions like: What country of origin do I prefer? What flavors do I prefer? How can I prepare coffee to meet my preferences? This last question is where we will spend most of our time. Beginning on day 1 we’ll sample different brewing methods. And we’ll experiment with them to bring out different flavors in coffee. We’ll then learn to manipulate a few key variables to produce cups of coffee that are perfect for our preferences. Along the way we’ll learn a little about the history of coffee, explore where coffee is grown, and how it is processed. But our central tasks will be these: to brew and drink lots of coffee to develop and meet preferences.
